I actually got some sleep last night, so I can write in sentences again. It wasn't a perfect night. I got up with Amy twice, and also Jeremy twice. Once Jeremy was freaking out in his sleep and I had to calm him down, and the second time he was standing in the middle of this room pointing at the laundry basket in his closet and saying, "Kaylynn is in there!" I told him that, no, she wasn't in there and he said, "Oh, well I guess I'll go back to bed then." I guess I was doing weird things last night too, but I don't totally remember what. I know I turned on the light and told Dan something weird, but I'll have to ask him what it was. So it's hereditary--sorry, Jeremy! We also both seem to have panic attacks waking us up out of sleep, and I hate the fact that I somehow passed that gene on to him, because it TOTALLY SUCKS!!!!
Anyways, I should get to the food . . .This was so easy--you just open the cans and chili seasoning packet and some water, mix them all in the crockpot, and turn it on for 6 to 7 hours. It is very much like Taco Soup, something we have a lot, so it wasn't totally foreign to the kids. Taco Soup has ground beef in it and taco seasoning instead of chili seasoning. Dan and Jeremy said they prefered Taco Soup, but the rest of us liked this one better. (I may have been influenced by the easiness of it!) We served it with Baked Tostitos Scoops (very yummy) and Sargento Reduced Fat Mexican Blend cheese (also good, I use this a lot). Kaylynn's friend Brandy was over, and she really liked it. She's a vegetarian, so it worked out well. A definite repeat--I would say just add some browned ground beef if you think you would miss it. I should note that I used Henry's organic red beans--mostly I picked these because they were the ones on sale, but they were very delicious, and I remember reading that red beans in particular are little nutritional powerhouses. These kinds of things excite me! I really think there is a health freak inside of me waiting to burst out! It's just trapped by my oversized omentum and stubborn cellulite.
